Jalapeno Popper Grilled Cheese Sandwiches


I love to cook dinner.  It's a new thing for me.  I used to dread it, but now I usually really look forward to it.  Sometimes, however, I just need a really quick, easy go-to meal for busy {or lazy} nights.  This is one of my favorites.  It's a classic ... with a twist! 

You may have seen this idea before on Pinterest.  That's where I discovered it -- well, Becky Bakes, via Pinterest..  This "recipe" is really more of an idea than an actual recipe.  I mean, we all know how to make a grilled cheese sandwich, right?  This one just adds a couple extra layers.  I adapted it just a little to suit my family.  If you love jalapeno poppers {I do!} you will ADORE this ooey, gooey sandwich treat!

Start out by roasting your jalapeno peppers.  I place mine, whole, on a baking sheet under a broiler for about 6 or 7 minutes until the skin starts to pop and it is good and blistered, then I flip the peppers over and do the same for the other side.


It takes about one whole, good sized jalapeno for each sandwich.  I usually do enough for my family plus a few extra to save in the fridge so I can have a repeat for lunch the following day.  As long as I'm roasting jalapenos, I like to do plenty.  Let them cool for several minutes until you can handle them.  I've heard that you should put them in a ziploc bag during this time, but I usually don't.  Peel the charred skins off your jalapenos and throw them away.  They should come off easily if your pepper is roasted well.

Cut the top off of each "naked" pepper and slit them down one side so they open up and lay flat.  Use your knife to scrape out the seeds and ribs from the inside.  They come out super easy and take most of the excessive spice with them.  You're left with a delicious pieces of flat jalapeno goodness.  {Wash your hands reeeallly well after this or you'll be sorry if you happen to touch your eyes.  Trust me.}

Construct your sandwich by spreading one piece of bread with cream cheese, layering on the pepper and cheddar or american cheese slice, and topping with another slice of bread.  Grill it on up and get ready to take the fast train to jalapeno heaven, baby!  I'm telling you -- it's THAT good.
